I still eat meat. But, I have cut my meat consumption by a ridiculous amount. Here’s my process: if I’m feeding myself, I try to eat vegan. If you’re feeding me…I’m eating whatever you’re cooking and loving every minute of it. One of the things that I’ve noticed about a lot of frugal food ideas is that they’re tasteless and uninspired. It’s even worse when you’re talking about vegan or vegetarian meal options. I’ve decided to share cheap healthy eats spanning almost all eating styles. People insist that it’s impossible to eat healthy on a budget. I’m pushing backing on that idea.

Cheap Healthy Vegan Meals: Vegan Ceviche
Whenever I’m looking for recipes they have to meet the following criteria:
- Delicious
- Makes sense as a meal you would actually eat
- Reasonably priced
Out of all of the diets out there, vegan meals are the ones most likely to go completely “left.” Where you just sit there wondering why? Basically, a lot of vegan recipes try too hard. When I discovered the vegan ceviche recipe initially I was a little concerned until I checked out the ingredients. Then, it made sense to me and sounded delicious.
Ibotta
But, first, I double-checked my Ibotta savings app to make sure I could save money on the ingredients. Ibotta is a Colorado based savings app that I love! You can use it to save on groceries, alcohol, clothes, and Amazon. New users earn $10 after you redeem your first savings towards your first savings payout. You do need to earn $20 to cash out your savings.
Vegan Ceviche
Is a deceptively simple dish to make. You’ll probably have one ingredient that you normally don’t purchase for this recipe…but, other than that, it’s a super straightforward recipe.
Ingredients
- Hearts of Palm-This is the ingredient that you might not be familiar with. I LOVE IT!! It’s like a tart tasting corn. Sort of. This is an ingredient that you will find often in South America. I’ve included a picture below. It’s not the sexiest picture but that’s basically what it looks like. Cut it into sections (don’t dice it). Whole Foods consistently carries the least expensive and best tasting option. Usually a can is around $2.75. Cut up 4 Hearts of Palm and add to a bowl.
- Jalapeño-Everyone needs a little spice to their life. You need a 1/4 of one jalapeño. Dice it. Don’t touch your eyes. This will cost around .50 cents.
- Parsley-Get 2 bunches. A bunch of regular parsley (not Italian) is around .90. Chop up one bunch and throw it into the bowl. (save the other for the next batch).
- Red Onion–Add about 1/4 of a cup diced or thinly sliced onion to the bowl. Don’t overthink it. Around $1.25 for a large onion.
- Radishes-A bunch is around $1 I like to add half of the bunch to the bowl.
- Cilantro-If you hate cilantro-don’t add it. If you like it, add about a quarter of a bunch to the bowl. A bunch is around $1
- Avocado-Recently I’ve noticed the price going down (it’s inching towards Spring). I use about a 1/2 of an avocado and normally they cost a $1-$1.50 (depending on the size) for a whole avocado.
- Cucumber-You can buy just one. The cost is $1. Dice half of the cucumber and throw it into the bowl.
- Juice of 1 Big Lime-Add to the bowl.
- Olive Oil-A couple of table spoons.
- Salt-To your taste.
Total Cost for Ingredients: $11 (ish)
However, you will get 2-3 servings depending on how big of a serving you plan on eating. You can eat it a salad or pair with tortilla chips.
- Two servings=Around $5.50, three servings=$3.60
Whole Foods Salad
People are paying $15 typically for a Whole Foods Salad for lunch. I would prefer to purchase groceries, make a quick meal and have food for later.

To Carrots and Flowers where I discovered this recipe. You’ll notice that I didn’t add bell pepper. That’s because I didn’t have any on hand. When cooking be flexible and adapt the recipe to your personal taste. OR, based on the ingredients you have on hand. Mine was delicious!
