I love avocado toast. There, I’ve admitted it out loud. There is something about the simplicity of a well-made avocado toast for breakfast or a late afternoon snack. I didn’t realize how much I loved it until I had one made in VAIL of all places by someone who clearly either: disliked avocados, or disliked people who like avocado toast. The simplicity of the recipe trips up many people. What could go wrong? Unfortunately, a lot of things. Happily, the breakfast in Vail was free. But, it got me to thinking about why on earth I would drop $8-$12 on avocado toast when I was just as happy making it at home. I have no answers for you on that one, but I do the components below that make an insanely good avocado toast every single time.

Avocado Toast
Feels so straightforward. Avocado and bread. Not so fast. There’s more to it than that. Look at this miserable picture of what was served to me the other day. I wish I could insert a side-eye emoji. First of all, there should be two slices of toast-not just one.
The Avocado
- This is without a doubt the most important component. The avocado needs to be ripe so that if you slice it like the picture above, it’s creamy when you bite into it. Unfortunately, the avocado in that picture was NOT ripe and it did not taste good at all to bite into hard avocado slices.
- Smashed up-is better in my experience because you can mix it with the following two components
- A 1/4 teaspoon of salt
- Garlic to taste
- 2 teaspoons of Lemon OR Lime juice (whatever is on hand)
- Put everything in a mortar and pestle and smash it together. Then, add to one small avocado and smash it together with a fork.
- Add red pepper flakes to it
- Optional-Trader Joe’s bagel spices (you can sprinkle some on top after you’ve made the toast)
- This adds levels of flavor to the avocado
The Bread
- Use good bread. Whatever you enjoy. It just has to be hearty enough to withstand the avocado after it’s spread onto it. It also needs to be lightly toasted.
- Sunflower bread
- Sourdough
- Multi-grain
Olive Oil
- Drizzle a little olive oil on the top to add some more layered flavor to the toast. As you can see in the photo above it looks dry and gross…because it was. Extra Virgin or regular olive oil both work fine. Don’t overthink it.
The Egg (optional)
Vegans, don’t freak out, this is optional. For everyone else, if you would like an egg on top you can either poach it or soft-boil it. There are great videos on YouTube if you’re not sure how to do it. Tip-watch the video on a day that you’re bored, not when you’re starving and just feel like eating.
Save that Money
I don’t eat out that often, so I would prefer to buy something that I normally wouldn’t make. Especially since most people already have these ingredients in their refrigerator.

When I started hearing millennials getting raked over the coals for buying avocado toast for $20 my wife and I, both boomer parents of three millennials had a good laugh. But later that week she made us some and, who knew, it was really good! I like the egg on top concept, we’ll have to try that next. Regardless of the bad press, I happen to think you millennials are a superior breed of young people!
