When Texan goes vegan it’s a pretty big deal. When a Texan named Beyonce goes vegan-it’s a huge deal. Are you thinking about joining in on Beyonce’s 22 Day Vegan Challenge? It’s not as hard as you think (especially if you’re lactose intolerant). But, for people who are new to eating vegan, resist the temptation to recreate all of your meat based favorite meals. 22 Day Vegan
The first time I tried out the vegan diet-I felt amazing…until I didn’t. I crashed so hard towards the end of the challenge that I was doing that the lack of energy caught me off guard. Here are a couple of things you need to do before committing to the challenge:
- Research-Spend some time researching what exactly being a vegan is. The general idea is that you don’t eat anything that originates from animals…for some people that also includes honey.
- Talk to your doctor-If you have a health issue or on medication it’s important (and smart) to talk to your doctor about what you’re about to do.
- 3 Day Tryout-Sometimes it’s good to try something out for a few days before going “all in”
- Go to Pinterest-And do some vegan meal planning. Here’s my Vegan Food Pinterest board for food inspiration.

Now that you’ve done your research, checked in with your doctor, and did a quick tryout-you’re ready to do the 22 Day Vegan Challenge.

Vitamin B-12
I didn’t take this the first time I went vegan. I learned that this vitamin is one that you need and is just easiest to get by taking a vitamin when eating vegan.
What Not To Do
There are a couple of things that wanna-be vegans and vegetarians do that make them gain weight. You should avoid doing the following:
- Breaded everything-I’m often amazed by how many vegans/vegetarians eat a ton of breaded stuff. Especially when they weren’t eating a ton of breaded stuff when they were eating meat.
- Recreating Every Meat Dish-That you’ve ever eaten in life. This is not good. When you do this you’re relying on fake “meats” that typically have certain amount of processing to the product to create “meat.”
- Focusing on starches-I’ve also noticed that people will eat really heavy meals based on white potatoes, pastas, etc. Vegan/Vegetarian place the emphasis on vegetables and fruits.
- Pre-made everything-This is actually an issue regardless if you’re a vegetarian/vegan or meat-eater. Pre-made meals are fine on occasion, but not every single meal.
Things to Consider
Vegan diets basically have a couple of main differences from a meat eater’s diet:
- No meat or animal products. That’s it.
Eating vegan (or vegetarian) doesn’t mean anything other than the fact that you will removing meat/cheese/animal products from your meals. It doesn’t mean a loss of flavor. It just means reimagining what meals would look like.
Make sure that embrace spices and food variety to make your meals something to look forward to.
My Favorite Items for Vegan Diets
I prefer to drink Ripple which is made out of pea protein. The pea protein has 8 grams of protein per serving-much more than other nut milks.
It continues to baffle me that people don’t use broth more when cooking with water. I LOVE Better Than Boullion to add depth to different entrees that I’m cooking. Wether I’m eating meat or not-I always use this product to add depth to the taste of my meals.
It’s a lot of fun making sushi. And, a simple sushi mat makes the process super easy.
Fennel is one of my favorite spices ever. It has a bit of a licorice taste to it and I love it.
Cumin is also one of my favorite spices. It has a fabulous smoky exotic taste to it. You’ll find this spice in a lot of Mexican and Indian dishes.
Red pepper flakes because there is nothing better than a little bit of heat!
Beyond Meat burgers. So.dang. good. You can feed these to a serious meat eater and they won’t know the difference. The texture, taste, basically everything tastes amazing. Cook it like a regular burger. It sizzles like regular meat. It’s crazy.
**You can pick up these spices from the bulk section at Sprouts, Whole Foods, and other grocers for a fraction of the cost. I’ve noticed that Whole Foods seems to be phasing out the bulk spices-so f.y.i.***

Being a vegan isn’t for everyone. But, it’s absolutely doable! And, if a Texan like Beyonce can do it-you can too 🙂
